Founded by Dana Frank in 2020 and held annually in March, The Wild Bunch is a wine fair in Portland, Oregon. Their mission is to celebrate and make accessible the dynamic world of “natural” wine, while also setting aside dogma and exclusivity.
The fair showcases 70+ wineries and importers from around the world that embrace organic, biodynamic, and regenerative farming, minimal interventions in the cellar, and an overall commitment to letting grapes be grapes without losing their sense of place and deliciousness.
We’ll be slinging some incredible bites alongside friends and chefs from Astral PDX - you don’t want to miss this!

Mailata - Festival of the Pig

Maialata: A Feast of the Whole Hog
Maialata is an age-old Italian tradition — a winter workday turned feast — celebrating the art of whole-animal butchery. Rooted in Northern Italy’s mountain towns, communities would gather to butcher, cure, and preserve a hog for the year ahead.
Now an Oregon wine country tradition led by Cathy Whims and Rudy Marchesi, this year’s Maialata welcomes guest of honor Chris Cosentino (Top Chef Masters winner) to lead the porchetta demonstration and morning butchery.
The day includes hands-on workshops, gnocchi-making with Cathy, a farm lunch from Sarah Schafer, Cana’s Feast wines, and a multi-course dinner built from the day’s work — alongside chefs Bryan Donaldson, Rick Gencarelli, Kari Shaughnessy, and Brett Uniss. Not just a tasting, but a roll-up-your-sleeves celebration of craft, community, and feast.
